A pale ale with Earl Grey tea
An American pale ale with Earl Grey leaves added. It sounds odd and works beautifully - bergamot from the tea pulls in the same direction as the citrus hops, so instead of two flavours you get one. Unfiltered and unpasteurised, clearly hoppy but without biting bitterness.

American Pale Ale is the style that kicked off the beer revolution: plenty of aroma hops, noticeable bitterness, but not yet the strength of an IPA. We add Earl Grey leaves to it. Bergamot from the tea and citrus from Mosaic, Citra and Cascade hops play the same melody, so the whole thing sounds coherent rather than like a forced experiment. The beer is unfiltered and unpasteurised, so drink it fresh.
It suits food with character but not too rich: Asian cooking, grilled poultry, goat cheese, salads with citrus. Serve at 7-9°C - too cold and you cut off the very aroma you came for.
Taste
Citrus and bergamot on the nose, fresh hop bitterness, a trace of tea at the end.

Pale Ale, Munich, pilsner and wheat malts, Earl Grey tea, Mosaic, Citra and Cascade hops, US-05 yeast.
What to pair it with
Good with Asian food, grilled poultry, goat cheese and summer salads. It fits wherever a stronger beer would be too heavy.
